Before cooking the appam, add salt to taste and 2 tbsp sugar as soon as it’s out of the fridge. If the batter is too thick, add water to bring it to the right consistency and let it come to room temperature before use. Remember to cook covered until the appam is cooked through and spongy. There’s no need to flip them.
